Bolo de mirtilos, arandos e limão com merengue queimado/ Blueberries, cranberries and lemon cake with brûlée meringue
























































No sábado passado um dos meus espaços preferidos do Porto celebrou o seu primeiro aniversário, estou a falar da Oficinacc, um espaço que conheço muito bem e que tenho uma relação especial. A Rute entregou-me a tarefa de fazer o bolo para comemorar a ocasião, escusado será salientar que fiquei muito feliz com o pedido e que dei o meu melhor para que o bolo fosse tudo aquilo que a Oficina transmite, conforto e elegância. 

Last Saturday one of my favorite places in town celebrated it first birthday, Oficinacc heats close to home so I develop quite a special relationship with the place and the staff. Rute asked to bake the cake for this special occasion, I felt really honored with this task so I gave it my best to make a cake that transmitted the elegance and comfort of the place.

























































Ingredientes:
6 ovos
250gr manteiga
200ml natas
500gr açúcar
1 colher de vinagre balsâmico
1 colher chá essência de limão
125gr mirtilos 
125gr arandos
450gr farinha com fermento
Merengue italiano (receita aqui)

Ingredients:
6 eggs
250gr butter
200ml cream
500gr sugar
1 tablespoon balsamic vinegar
1 tablespoon lemon extract
125gr blueberries
125gr cranberries
450gr self-rising flour
Italian meringue (recipe here)




















































































Preparação:
1-Bater muito bem os ovos com o açúcar e a manteiga. A seguir acrescentar o vinagre, o limão e os frutos (guardar alguns para mais tarde rechear o bolo). Juntar as natas e misturar tudo.
Por fim envolver a farinha.
2-Colocar a massa numa forma redonda e cozer em forno pré-aquecido a 175ºC cerca de 30 minutos. Retirar do forno quando estiver bem cozido e deixar arrefecer.
3- Cortar o bolo a meio e rechear com o merengue e os restantes frutos.
4-Cobrir tudo com o merengue e queimar ligeiramente com um maçarico de cozinha.


Method:
1-Whisk the eggs with the sugar and the butter, than add the vinegar, the lemon and the fruits (save some for filling), pour the cream and mix everything together.
Lastly fold the flour gently.
2-Transfer the batter into a cake tin and bake in a pre-heated oven at 175ºC for 30 minutes. Remove from the oven and let it cool down.
3-cut the cake in half and fill it with the meringue and the fruits.
4-Cover it with the meringue and brûlée it with a kitchen torch

      estes comprei num mercado de grossistas de hotelaria mas penso que poderá encontrar nas grandes superfícies :)
