Um bolo muito, muito grande de lima e ricotta/ A big, big ricotta cake














































Recentemente recebi um pedido para um bolo bastante grande, ou grande o suficiente para deixar 60 convidados felizes e de barriga cheia. Após alguma troca de e-mails ficou acordado que seria um bolo de ricotta e lima, o desafio já era grande mas tornou-se maior com um pedido de um bolo igual, em formato pequeno, sem lactose. Fiquei muito orgulhosa deste trabalho e já sabem por aqui é mais bolos!

Recently I received an order for a large cake, large enough to feed 60 happy guests. After some e-mail exchanging we settled on a ricotta lime cake, the challenge was already big but it became even bigger with a request for smaller but identical lactose free cake, in the end I was pretty proud of this work and as you are aware cakes are our thing.






















































Ingredientes:
1500gr açúcar
750gr ricotta
12 ovos
6 limas sumo e raspa
750gr manteiga derretida
1300gr manteiga com fermento
Buttercream:
500gr manteiga (temperatura ambiente)
750gr açúcar em pó
6 colheres de leite
Raspa de 2 limas


Ingredients:
1500gr sugar
750gr ricotta
12 eggs
6 limes, zest and juice
750gr melted butter
1300 self-rising flour
Buttercream:
500gr room temperature butter
750gr icing sugar
6 tablespoons milk
zest of 2 limes



























































Preparação:
1-Com uma batedeira elétrica bater durante cerca de 5 minutos o açúcar, a ricotta e os ovos.
Acrescentar o sumo e raspa das limas e misturar bem.
Juntar a manteiga e bater durante mais alguns minutos.
Acrescentar a farinha lentamente sempre a bater delicadamente.
2-Distribuir a massa por formas de bolo previamente untadas com manteiga, cozer em forno pré-aquecido a 180ºC (o tempo vai variando mediante o tamanho das formas). Retirar do forno e deixar arrefecer completamente antes de decorar.
3-Buttercream: com uma batedeira elétrica bater a manteiga para que fica macia, juntar aos poucos metade do açúcar.
Quando o açúcar estiver totalmente misturado acrescentar 2 a 3 colheres de leite e as raspas de lima, continuar a bater e a juntar aos poucos o restante açúcar. Altere com com as restantes colheres de leite.
4-Montar o bolo, rechear e cobrir com o buttercream. Neste caso decorei com flores e raspas de chocolate branco.



Method:
1-In a electric mixer whisk the eggs, the sugar and the ricotta for 5 minutes.
Add the juice and the lime zests and mix it.
Then add the butter and whisk for a few minutes.
Slowly add the flour and continue mixing until it reaches a cake batter.
2-Transfer the batter into greased cake tins, bake in pre-heated at 180ºC (baking time changes depending on the size of the tin).
Remove from the oven and let it cool completely.
3-Buttercream: whip the butter to a soft point then slowly add half of the sugar. When the sugar and the butter are completely melted add 2 to 3 tablespoons of milk and the lime zests. Continue whipping and slowly add the remaining sugar altering with the remaining milk.
4-Ensemble the cake making layers and frosting it with the buttercream. In this case I chose to decorate with flowers and white chocolate sprinkles.

    Às vezes cá em casa também tenho de fazer bolos bem grandes para deixar os convidados com as barriguinhas bem aconchegadinhas:)
    Podes dizer-me qual o tamanho das formas que usaste?
